what's for dinner tonight: spinach veggie burgers and oven baked fried pickles

I've been wanting to make some homemade veggie patties for some time. My dreams came true tonight.

Spinach Vegetable Patties


Ingredients:
4 cups of frozen spinach, drained
1 small onion, chopped
2 eggs
1/2 cup of shredded cheese
1/2 cup of bread crumbs
1/2 tsp. of salt
1/2 tsp. of pepper
1 tsp. of garlic powder

Combine all ingredients in a mixing bowl.


Using your hands, make burger patties.


In a frying pan, heat up some olive oil on medium-high and cook for 5-7 minutes on each side. Serve with a bun and condiments!


Oven Baked, Fried Pickles


Ingredients:
Panko bread crumbs
1/4 cup of flour
1 tsp. of garlic powder
1/2 tsp. of Creole seasoning
1/2 tsp. of Worcestershire sauce
1/2 tsp. of Louisiana Hot Sauce
1/2 tsp. of ground pepper
1 jar of pickles
Buttermilk ranch (for dipping)

Combine the flour, garlic powder, Creole seasoning, Worcestershire sauce, Louisiana hot sauce, and ground pepper in a small mixing bowl. Set aside a small bowl of bread crumbs.


Dip the drained pickles in the flour mixture and into the bread crumbs after. Set each pickle on a sprayed oven sheet. 


Bake on broil for 2 minutes on each side.


Mix ranch and hot sauce together for a yummy dipping sauce.
